The term “Raw” isn't a legally defined or regulated term. So a brand can overheat their honey and still legally stamp “Raw” on the jar.
Many brands overheat their honey to 160-170°F (which can significantly reduce the good stuff— pollen, enzymes, and antioxidants), we gently warm ours below 105°F to facilitate handling, preserving what makes raw honey special.

Upon opening the jar there is a nice layer of chocolate on top of this thick, gooey honey. It's a great combo for dipping pretzels I've found. It's not your typical honey that's syrupy and runny. It's thick and dippy. It's fun and flavorful.
