WHAT “RAW” ACTUALLY MEANS TO US

“Raw” isn’t a federally defined standard for honey, which means two jars labeled raw can be handled very differently.

Many brands heat honey to 160–170°F and finely filter it to make bottling easier and delay crystallization so it stays liquid on the shelf. But higher temperatures can significantly degrade some of honey’s naturally occurring, heat-sensitive characteristics, including delicate enzymes. We do things differently.

Our honey is unfiltered and unpasteurized, gently warmed below 105°F only enough to facilitate handling. From there, we mix in our ingredients and guide the honey’s natural crystallization until it becomes thick, smooth, and creamy.
